Just to make sure, you're referring to recruiting sites?
If so, it means they are capable of playing more than one position.

What ncduck said^. Imagine a player who does many positions. It'd be crazy to mark him as WR, TE, RB, QB, DB, etc. If he's being recruited more than a position or two, he'll be marked as an athlete.
