Diets.
Most Californians have moved to a plant based diet, so aren't producing kids over 275 any longer.

Fried food isn't nearly as popular in California as it is in the south.

most of them are playing on the offensive line now is probably biggest contributor. The state not worshiping at the alter of morbid obesity like some of the Southern States is probably a close second.
